One Side of the Tray Browns Hard

Short answer

Hard colour down one side means heat is reaching the tray unevenly. On a Wolf, rule out the loading first: rack position, the number of trays, foil. Then the moving parts: a convection fan that is not turning, a door seal leaking along one edge, or an oven sitting out of square in its opening. Loading comes first

Wolf’s guide describes Bake as the mode for one rack, and Convection, with its moving air, as the one for several racks with even browning. Plenty of lopsided trays are two sheets run in Bake, a pan pushed hard against a side wall, or one big tray starving the rack below it of air. Swapping the mode or the rack costs nothing and settles many of these.

When the loading is right

If a single tray in the middle still colours hard on one side, look at what moves heat round the cavity. A convection fan that has stopped, or turns sluggishly, leaves hot and cool zones. A door gasket gone flat along one edge leaks there. And an oven that leans, whether a range whose feet have shifted or a wall oven on a cabinet shelf that has settled, pools batter and oil on the low side and closes the door out of true. Before you book

  1. Bake a single tray on rack position 3 of the six numbered on the oven face, then compare the result with the shelf you normally use.
  2. Run Convection with the door shut and confirm the fan is turning. On a Wolf gas range, press the convection fan button; that fan runs only while the door is closed.
  3. Take out any foil lining the floor or walls and anything standing on the oven floor. Wolf's guides tell owners not to line the oven or cook on its floor.

Questions

Should I turn the tray halfway, or does that just hide a fault?

Turning a tray once is ordinary baking practice and hides only a mild imbalance. If you need to do it every time for an even colour, with one tray on rack 3 in Convection, the oven has a problem worth finding.
