Short answer

When a Wolf oven ignores its temperature probe, check the setting before the part: Wolf's dual-fuel guide bars the probe from Broil, Proof and Dehydrate, and from Timed Cook or Delayed Start. Refused, or not read

A probe that is plugged in and ignored has two explanations: the oven is refusing it, or it cannot read it. Wolf’s current dual-fuel range accepts the probe in most modes, but not in Broil, Proof or Dehydrate, and not while Timed Cook or Delayed Start is running, and it expects the oven preheated before the probe goes in. The lead and the receptacle

The receptacle sits high on the cavity wall, and the probe is meant to leave it with one straight pull downward. Tug it out sideways, or catch it on a rack in the top position, and the socket or the plug can bend; Wolf warns this can damage both. The lead has a hard life of its own, in a hot cavity and then in a crowded drawer. A probe that reads one day and vanishes the next points to a break inside a lead that still looks sound. We test the probe on its own first, then the receptacle and its wiring, and only then the control.

Before you book

Choose a mode the probe accepts, such as Bake or Roast, with no Timed Cook or Delayed Start set. Preheat, put the food in with the probe in it, plug the probe in, close the door and touch Probe.

Wearing an oven glove, since Wolf warns the probe and receptacle get very hot, make sure the plug is pushed fully home. It should later come out with a straight pull downward.

With everything cold, run a finger along the lead for a kink, a flattened stretch or a scorched patch, and check that the plug itself is straight.

Make sure it is the probe that shipped with this oven. After a remodel, the probe in the drawer sometimes belongs to the appliance that was removed.

Ordinary meat thermometer probes: do they work in the Wolf receptacle?

No. Wolf's guide asks for the probe that shipped with the appliance and nothing else, so another brand's probe, or one saved from an older oven, may simply not register.
